Egg Drop Soup for the First Week Home

What you'll need
- 2 cups chicken or vegetable stock
- 2 eggs, beaten

How to make it
Simmer the stock with ginger slices for five minutes to let the flavour come through. Remove the ginger, bring the stock to a gentle boil, then drizzle in the beaten egg in a thin stream while stirring slowly, this is what gives you the silky ribbons instead of a scrambled mess. Turn off the heat as soon as the egg sets, it only takes seconds. Finish with sesame oil, white pepper, and spring onion.
